John Shelton Reed is Professor Emeritus, Dept of Sociology at UNC-Chapel Hill and former director of the Howard Odum Institute for Research in Social Science. He helped found the university's Center for the Study of the American South, the quarterly Southern Cultures, and has written Holy Smoke: The Big Book of North Carolina Barbecue, On Barbecue, and Barbecue: A Savor the South Cookbook.

Sheri Castle is an award-winning professional food writer, recipe developer, cooking teacher, and public speaker known for melding stories, humor, and culinary expertise. She is the host of The Key Ingredient, an Emmy-winning cooking show from PBS that airs and streams across the country. Sheri has written The New Southern Garden Cookbook, Instantly Southern, and The Southern Living Community Cookbook.
